i promised a post about food.
and i'm not one to go back on promises. (remind me of this later)
since i have been in new zealand i have eaten really well! lots of dinners with new friends. everyone is really eager to share meals and cook together- i think because it reminds us so much of home.
one of the first nights we were here i cooked dinner with my flatmate ryan and two of our good friends, tom and mike.
mike - beard.
tom - blue oxford.
ryan - flatmate from boston.
we made penne pasta, warmed up some tomato sauce and added mushrooms, garlic and onions and sprinkled on some shredded colby cheese. we also grilled chicken breasts to go on top of the pasta. we had red wine in old jam jars to go with the meal.
for breakfast i usually cook up some eggs and toast... or i eat coco puffs. ( very dependent on what time i woke up for class). we also have a french press, so i have learned to use that in the last few days to make coffee.
this night i made a grilled cheese and cooked up some eggs.
ah. my best effort at feeding myself yet.
i was feeling particularly industrious.
i whipped up some homemade guacamole (mashed avocados, lime, garlic powder, salt) and smeared that on some toasted bread. then i layered on cheese, some chicken i grilled and some veggies (onions, mushrooms, spinach caramelized in brown sugar). i threw on another piece of toast and heated the whole thing up in our george foreman. again- my diet coke in a jam jar. (i have turned my flatmates on to this as an acceptable glassware... they were giving me a hard time until i explained that i drink out of mason jars at home. then they just attributed it to my being southern, and therefore acceptably different)
mmmmm. yummy fish and chips from "captain ben's", a tiny establishment that is a three minute walk from my flat run by a small asian men, assumably named ben. (they also serve deep fried mars bars... tom and i had one the other day. i'm fairly certain that for a brief moment i entered nirvana)
and finally. today for lunch i made up some ramen noodles (sans the gross chicken flavoring) and added a little butter, a little cheese, some of my caramelized veggies and some sriracha garlic and chili sauce. i also toasted up the rest of my garlic bread. it was good- a little too sweet. i think next time i will just saute the veggies in olive oil and salt.
well. that's what i've been eating the past few weeks. lots of pasta. so many carbs... i need to pick up some fish or lamb and cook it- but i haven't been quite that ambitious lately!

i have to go do my dishes and run to social work class!
my friend laura bennett from furman is interning in NZ and she is on her way to christchurch and should be here when i get out of class. i'm so excited!
i'll post any pictures from our adventure to the city tomorrow.
